The Cannatorta IGT Bianco 2021 from Podere le Ripi is a fascinating white wine from Tuscany, which is characterized by its complex production and biodynamic philosophy. Made from Trebbiano (70%) and Malvasia (30%) grape varieties, this wine is an example of the estate's artisanal

winemaking.

In the glass, the Cannatorta appears in a bright shade of gold. The bouquet is intense and varied, with aromas of tropical fruits, dried citrus fruits, green tea and salty minerality. On the palate, the wine is full-bodied and luscious, with balanced acidity and complex earthy spicy notes. The texture is rich and meaty, making the wine a unique taste experience

The peculiarity of this wine lies in its production method. After harvesting, the grapes are macerated on the skins in terracotta amphorae, followed by a further 7 months of aging on the yeast in concrete containers. This technique gives the wine its characteristic structure and complexity. In addition, the wine is bottled without the addition of sulfur, which underlines its purity and naturalness.

The sedimentary, alluvial soils with a rich variety of rocks that contribute to the minerality of the wine are typical of this wine and the Montalcino wine-growing zone. The Mediterranean climate, with its hot summers and mild winters, offers ideal conditions for growing Trebbiano and Malvasia
