Goldmuskateller DOC BIO 2023 from the Manincor winery is a shining example of biodynamic viticulture in South Tyrol. Goldmuskateller, also known as Moscato Giallo, is an old grape variety that is appreciated for its intense aromas and aromatic freshness. This grape variety grows particularly well in the steep, south-facing slopes of Mareit Leiten at 350 m above sea level as well as in the vineyards of Vogelleiten and Panholzer, which are characterized by clayey limestone soil. The extreme exposure to the sun and the warm gravel soils with moraine deposits provide ideal conditions for the grapes to ripen.
The special feature of this wine lies in its biodynamic cultivation and the careful processing of the grapes. After harvesting, the destemmed grape berries remain in the press for twelve hours to extract aroma and structure from the berry skins. Fermentation takes place in wooden barrels and in steel tanks, mostly spontaneously with the grape's own yeasts. During the five-month aging process on fine yeast, the aroma and taste of the wine are refined
