Der Kanonkop Paul Sauer 2021 ist ein herausragender südafrikanischer Rotwein aus Stellenbosch, der sich durch seine tief rubinrote Farbe auszeichnet. In der Nase entfaltet er ein komplexes Bouquet von Kirschen, Cassis, Zedernholz, Zigarrenkiste, Teeblättern und Tomatenmark. Am Gaumen präsentiert er sich mit Aromen von Cassis, Cranberries, würziger Pflaume und süßer Vanille. Die feinkörnigen Tannine und die ausgewogene Säure verleihen dem Wein eine elegante Struktur und einen langen, anhaltenden Abgang.

Dieser Wein ist eine klassische Bordeaux-Cuvée, bestehend aus 70 % Cabernet Sauvignon, 17 % Merlot und 13 % Cabernet Franc. Die Rebsorten verleihen ihm Tiefe, Komplexität und ein bemerkenswertes Reifepotenzial. Besonders hervorzuheben ist die 24-monatige Reifung in neuen französischen Eichenfässern, die dem Wein zusätzliche Komplexität und Eleganz verleiht.

Das Weingut Kanonkop liegt an den Hängen des Simonsbergs in Stellenbosch und ist bekannt für seine erstklassigen Rotweine. Unter der Leitung von Kellermeister Abrie Beeslaar, der seit über zwei Jahrzehnten für Kanonkop tätig ist, hat das Weingut zahlreiche internationale Auszeichnungen erhalten.
