Der Kalterersee Auslese DOC Vernacius Solemnis 2021 vom Landesweingut Laimburg präsentiert sich in einem hellen Rubinrot mit aufhellenden Rändern. FALSTAFF In der Nase entfaltet er animierende Aromen von Himbeeren, Erdbeeren und Granatapfel, begleitet von einer leichten Würze. Am Gaumen zeigt er eine mittelgewichtige Struktur mit animierender Säure und präziser Frucht, die in einem harmonischen Abgang mündet.

Dieser Wein wird aus der Rebsorte Vernatsch (italienisch: Schiava) hergestellt, die für ihre leichten, fruchtigen Rotweine bekannt ist. Typisch für Vernatsch sind Aromen von roten Beeren, eine moderate Säure und ein geringer Tanningehalt, was zu einem weichen Trinkfluss führt.

Eine Besonderheit bei der Herstellung des Vernacius Solemnis ist die Praxis, bei zwei Dritteln der Trauben zum Zeitpunkt der Ernte den Haupttrieb durchzuschneiden, sodass die Trauben für weitere zehn bis 14 Tage am Rebstock verbleiben. Dies führt zu einer natürlichen Eintrocknung der Beeren und einer Konzentration der Inhaltsstoffe des Mostes. Anschließend reift der Wein im großen Holzfass, was ihm zusätzliche Komplexität verleiht.
