The Sauvignon Riserva DOC Mathias 2021 from the Pfitscher winery, located in the “Kathreinerfelder” vineyard in Völs am Schlern, South Tyrol, shines in a sparkling golden yellow. This exclusive white wine, which is grown at an altitude of 900 meters, impresses with its intense aroma of pineapple, papaya, gooseberry and green pepper, complemented by notes of white pepper. The combination of gray porphyry and sandy-chalky rock dust in the soil gives it a distinctive mineral note.
On the palate, Mathias impresses with its directness and juiciness, which underline its freshness and accompany it right through to the long finale. The fermentation takes place at 50% in oak barrels and stainless steel tanks, after a six-hour maceration period, followed by an 18-month aging on fine lees. This careful processing ensures the refined aroma and depth of the wine.
With an annual production of just around 2,000 to 3,000 bottles, the Sauvignon Riserva “Mathias” underlines its exclusivity.
Ideal with fish, asparagus, rice dishes and poultry, this wine represents the craftsmanship and unique climatic conditions of the Pfitscher winery, known for its steep vineyards that cannot be processed by machine. This special location and the artisanal approach contribute significantly to the quality and unmistakable character of this outstanding white wine.
