The Enosi Cuvée IGT 2023 from Baron di Pauli is an elegant and expressive cuvée of Riesling and Sauvignon Blanc. In the glass, the wine is pale straw yellow. The bouquet seduces with complex aromas of exotic fruits, citrus notes, white flowers and a subtle spice. On the palate, the wine is fresh and lively, with well-integrated acidity, fine minerality and a long,
elegant finish.The Riesling and Sauvignon Blanc grape varieties in this cuvée offer an interesting combination. Riesling brings in fresh acidity and aromas of green apples and citrus fruits, while Sauvignon Blanc provides tropical fruit notes and herbal nuances. This combination gives Enosi its unique complexity
and balance.A special feature of this wine is the separate vinification of the two grape varieties. The Riesling grapes are pressed directly and fermented in stainless steel tanks, while the Sauvignon Blanc grapes are macerated for twelve hours before pressing. Some of the must is fermented in wooden barrels. The wine is then aged on fine lees for eight months, which gives it additional complexity and structure
