.The special feature of this organic wine lies in the complex production process. The raisin berries are squeezed slowly over eight hours and fermentation takes place in wooden barrels, spontaneously with the grape's own yeasts. The must fermented slowly for several months until fermentation stopped by itself at an alcohol content of 8.5%. This process results in an optimal ratio between alcohol, acid and sugar, which makes Le Petit so unique.
