The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel Mountains with deposits of sand and clay. The south-east orientation, constant ventilation due to falling winds and the autumn temperature differences between day and night create a unique microclimate in which the grapes ripen well on the vine for an above-average period of time and thus develop an optimal acid-sugar ratio

The Praeclarus Pas dosé DOC from 2018, produced by the St. Pauls Winery, is a remarkable sparkling wine that impresses with its elegance and finesse. The Chardonnay grape variety gives it a delicate variety of aromas of ripe apples, citrus fruits and a touch of brioche. The color is light gold with fine, persistent perlage.
This wine is special because it is bottled as a pas dosé, i.e. without the addition of dosage, which underlines its purity and naturalness. After careful hand harvesting and gentle pressing, fermentation takes place in stainless steel tanks, followed by at least 36 months of aging on the yeast, which gives the wine its complex texture and fine mousseux. The Praeclarus pas dosé DOC is a true expression of top craftsmanship and is perfect for special occasions and festive moments.
