The Sauvignon DOC “Mediaevum” 2023 from Gumphof is a 100% Sauvignon Blanc grown on limestone moraine soils at 400–550 m elevation in the Eisack Valley. The wine is fermented in stainless steel with a short lees aging, resulting in a fresh, aromatic and expressive profile.
In the glass, it presents a pale straw-yellow color with green highlights. Notes of gooseberry, elderflower, grapefruit and herbal spice enter the nose. On the palate it is dry and crisp, with vibrant acidity, juicy fruit and a defined mineral edge. Structured yet approachable, this wine is ideal as an aperitif or paired with salads, asparagus, and light fish dishes.
