The Sauvignon DOC “Praesulis” 2023 from Gumphof is a single-varietal Sauvignon Blanc from the Alto Adige DOC, grown on limestone-rich moraines at 450–550 m altitude near the Schlern massif. Fermented two-thirds in steel and one-third in large wood barrels, it lies on the fine lees for about 10 months.
In the glass it shows a pale straw-yellow tint with light green highlights. On the nose, distinct aromas of gooseberry, grapefruit, elderflower, and subtle herbal-citrus notes. The palate is dry and structured, with vibrant acidity, juicy fruit and a saline mineral backbone. A long, refreshing finish underscores the wine’s regional identity. Ideal with seafood, light vegetarian fare or as a sophisticated aperitif.
