The Sauvignon DOC Bubo 2023 from Grottnerhof is a 100% Sauvignon Blanc from South Tyrol’s Eisack Valley. Named after the owl (Bubo), this wine expresses the region’s mineral terroir. Fermented and aged in stainless steel with cold temperature control, it preserves vibrant fruit and freshness. In the glass, it shows a straw-yellow color with pale green highlights. Aromas of gooseberry, passion fruit, elderflower and blackcurrant greet the nose. On the palate, it is dry, crisp and mineral-driven, with vibrant acidity and a clean finish. A light, expressive white—ideal as an aperitif or paired with seafood, vegetarian cuisine, and goat cheese.
