Today, the Pramstrahler family cultivates around 3.5 hectares of vineyards located between 450 and 600 meters above sea level.

Grottnerhof winery boasts a remarkable history. Originally built in the 13th century, it was already documented during the time of the famous minstrel Oswald von Wolkenstein as part of the agricultural heritage of the Isarco Valley. Over the centuries, the now heritage-protected estate served as a winery, a traditional "Törggelestube" cellar, and a rural enterprise. Its steep vineyard slopes, with gradients between 50 and 70 %, made cultivation challenging but rewarding. Portions of the original structure, such as the smoke-blackened curing kitchen and the old stone oven, are still preserved today. 
In 2007, Stephan Pramstrahler, owner of the nearby Romantik Hotel Turm, acquired the dilapidated Grottnerhof and began a sensitive and thorough restoration. Historic spaces like the farmhouse parlour, cross-vaulted cellar, and old wine barrels were carefully preserved and subtly enhanced with minimalist suites and modern amenities. The result is a harmonious blend of viticultural tradition, heritage architecture, and contemporary design. 
Today, the Pramstrahler family cultivates around 3.5 hectares of vineyards located between 450 and 600 meters above sea level. These steep slopes, worked entirely by hand, benefit from a unique microclimate combining Mediterranean sunshine and cool Alpine nights. Pinot Blanc, Sauvignon, Gewürztraminer, and Pinot Noir thrive on porphyry-rich soils, lending the wines their distinctive mineral complexity. Winemaker Markus Prackwieser from the Gumphof winery oversees vinification, balancing stainless steel tanks and large wooden barrels, requiring patience and precision.
Beyond wine production, Grottnerhof has also become an exclusive venue for special events. Two romantic suites offer a peaceful retreat, while the estate frequently hosts weddings and private celebrations, all set within the stylish and historic atmosphere of an 800-year-old home. The wines are also served in the nearby Hotel Turm's restaurant, where guests may even participate in the harvest or enjoy guided tastings in the baroque stone cellar. 
A signature element of the Grottnerhof is its symbolic bird motif: each wine bears the name of a distinctive bird—like Corax (Pinot Noir), Tetrix (Gewürztraminer), or Bubo (Sauvignon)—with artistically illustrated labels by Florin Kompatscher. The raven, Corax, serves as the estate’s emblem, symbolizing intelligence and a deep connection to nature.
