Craftsmanship defines the winery’s philosophy: gentle pruning, hand harvesting, biodynamic soil management with natural preparations, and a fully integrated production process.

The Haderburg winery takes its name from the medieval castle of the same name, perched on a dramatic rocky outcrop above Salorno, South Tyrol’s southernmost winegrowing village. This historic fortress, once a symbol of power and a regional administrative hub, has shaped the local landscape for centuries. After passing through the hands of various noble families and falling into disrepair, it was restored in the early 21st century and once again became a place of identity for visitors and wine lovers. 
In the late 1970s, the winery took its first steps toward its current identity. Around 1976/77, Alois Ochsenreiter – then primarily a fruit and wine farmer – began producing traditional-method sparkling wines from Chardonnay and Pinot Noir. Within a few years, Haderburg had become one of the first South Tyrolean wineries to offer sparkling wines made using the Champagne method – a craft that has since become central to its identity.
With the acquisition and revitalization of the Hausmannhof estate in 1985, Haderburg gained access to prime vineyards for Chardonnay and Pinot Noir. Today, the vineyards span across Hausmannhof near Salorno, Obermairlhof in the Eisack Valley, and additional plots in Tramin and Kurtatsch. Around 13 hectares of vineyards are cultivated biodynamically, forming the foundation for a diverse portfolio: classic sparkling wines, whites from Chardonnay, Sauvignon, Gewürztraminer, Riesling and Sylvaner, and reds from Pinot Noir, Cabernet and Merlot.

In the cellar, each wine is treated with care. For sparkling wines, bottles are hand-riddled up to 40 times before being disgorged after months or even years on the lees. 
Today, Haderburg is not only deeply rooted in the region but also stands as a symbol of sustainable excellence in South Tyrol. Lovers of sparkling wines appreciate the carefully aged Hausmannhof Riserva and Pas Dosé, while wine enthusiasts from around the world are drawn to the estate’s white and red wines, all crafted according to organic and biodynamic principles. Guided tours, tastings, and the traditional tavern in the castle courtyard offer guests a chance to experience the union of history and the present in every glass.
