The Cuvée Sonnrain BIO 2019 by Thomas Niedermayr is a remarkable wine that impresses with its unique manufacturing process and commitment to organic viticulture. This wine undergoes spontaneous fermentation through the natural yeast of the vineyards, making its characteristics authentic and unique. The muscaris used for this wine undergoes a 3-day maceration, which intensifies its aromas and structure. The aging then takes place in neutral wooden barrels for 12 months on the lees, followed by a further 9 months in steel barrels. This careful aging gives the wine remarkable complexity and texture.

In April 2021, the wine was bottled unembellished and unfiltered to preserve its purity and naturalness. The scent of the Sonnrain BIO cuvée is characterized by subtle notes of rose petals, lemon balm and nutmeg, which offer a seductive olfactory experience. On the palate, the wine is pleasantly fresh with a medium-bodied body and a surrounding saltiness, which underlines its freshness and ensures a balanced taste experience.

This wine is not only a treat for the palate, but also a testimony to Thomas Niedermayr's commitment to organic viticulture and the preservation of the natural environment. Its unique production and characteristic aroma profile make it an indispensable companion for special moments and
