The grappa appears in the glass as crystal-clear and colorless. In the nose, a delicate, pure bouquet unfolds, evoking fresh grapes and forest floor, with a subtle mineral hint. On the palate, it offers elegant dryness paired with sprightly freshness and a distinct, clear character. The finish is precise, lingering, and varietally expressive – with a dry and mineral aftertaste.
This grappa is distilled exclusively from Sylvaner marc (pomace) that is fully ripe and healthy, produced in the Neustift monastery cellar. It is not barrel-aged (NAS), which emphasizes its purity and varietal identity. Serve ideally at 18–20 °C, to bring out its aromas and structure to the fullest.
