Whether spaghetti, penne, or risotto – pasta and rice are the cornerstones of Italian cuisine. The difference lies in the details: while industrial pasta is often dried quickly and pressed in Teflon molds, traditional producers use slow drying at low temperatures and bronze dies. Among the producers, Martelli holds a special place: a family-run pasta maker that has been producing distinctive, characterful pasta for decades. Pasta Testa represents variety and authenticity, reflected in carefully selected durum wheat and traditional recipes.
