Pasta Testa
Pasta Testa is an Italian pasta producer based in Cercemaggiore in the Molise region, founded in 2007. The company produces pasta using traditional methods and places strong emphasis on high-quality raw materials and careful processing. The pasta is made from durum wheat semolina obtained from 100% Italian wheat, partly sourced from regional cultivation in Molise. Some product lines also use traditional durum wheat varieties such as Senatore Cappelli.
A distinctive feature of the production process is bronze die extrusion (trafilata al bronzo). This method gives the pasta a slightly rough surface, allowing sauces to adhere particularly well. After shaping, the pasta is slowly dried at low temperatures to preserve the flavor, structure, and natural characteristics of the durum wheat. The range includes various classic pasta shapes produced according to artisanal principles.
