The Pas Dosé Riserva DOC 2020 by Comitissa is a South Tyrolean Metodo Classico that reflects precision and terroir expression. It is crafted through secondary fermentation in the bottle followed by extended ageing on the lees, resulting in fine mousse, structure and aromatic depth.
The term Pas Dosé means that no dosage is added after disgorgement. With zero added sugar, the wine presents itself in a particularly dry, pure and focused style, highlighting grape character, vintage and origin.
The designation Riserva indicates a longer lees ageing period compared to the standard version, in accordance with production regulations, ensuring greater complexity and ageing potential. The 2020 vintage stands out for its balance, freshness and mineral tension.
On the nose, aromas of citrus, green apple and white flowers unfold, complemented by subtle hints of bread crust and almond; on the palate it is bone dry, precise and mineral, with vibrant acidity, fine mousse and a long, clean finish.
