Fichimori is a modern red wine from Apulia, produced by the Tormaresca estate of the Antinori family. The grapes mainly come from the Salento area in southern Apulia, a region characterized by a Mediterranean climate and limestone- and clay-rich soils that are particularly well suited for indigenous grape varieties. The wine is classified as Salento IGT and is intentionally crafted in a fresh and approachable style. One of its distinctive characteristics is its versatility: it is designed as a red wine that can also be enjoyed slightly chilled, highlighting its vibrant and easy-drinking personality. The blend is based primarily on Negroamaro with a small addition of Syrah. Negroamaro is one of the most traditional red grape varieties of Apulia and is widely cultivated in the Salento area. It typically produces deeply colored wines with fruity and spicy aromas and a characteristic structure. The small proportion of Syrah adds further aromatic nuance and contributes to the wine’s balance and roundness. The winemaking process begins with a cold maceration of the grapes at around 5 °C for several days, allowing a gentle extraction of color and fruit aromas. Fermentation then takes place without the skins at controlled temperature. The wine is aged for several months in stainless steel tanks in order to preserve its freshness and expressive fruit character. In the glass, the wine shows a ruby-red color with violet reflections. The bouquet reveals aromas of fresh red fruits such as strawberry, raspberry and cherry, complemented by delicate floral notes of rose and violet. On the palate it is soft and juicy, with lively freshness, vibrant fruit and a subtle hint of spice that leads into a harmonious finish.
