The Sauvignon DOC 2025 by Peter Zemmer comes from South Tyrol, specifically from vineyards around Cortina on the South Tyrolean Wine Road. Some of the vines grow in the area of Pochi di Salorno at around 450 meters above sea level, where warm days and cool nights allow the grapes to ripen slowly and evenly. The vines are trained using the Guyot system and produce relatively low yields, which enhances the aromatic concentration of the grapes. After harvest the grapes are carefully processed. Before pressing, a cold maceration of about 8–10 hours takes place to intensify the varietal aromas. Fermentation then occurs in temperature-controlled stainless steel tanks at around 19 °C, preserving freshness and aromatic purity.
The wine is made from 100% Sauvignon Blanc. This grape variety is known for its aromatic intensity and lively acidity. In South Tyrol it produces elegant, expressive wines with great freshness.
In the glass the wine shows a pale straw yellow color with greenish reflections. The bouquet reveals aromas of elderflower, nettle, green pepper and subtle honey notes. On the palate it is fresh, aromatic and well balanced, with lively acidity and a harmonious, persistent finish.
