Cassiano is a masterful blend of Merlot, Cabernet Franc, Tempranillo, Petit Verdot, Cabernet Sauvignon and Syrah. Merlot brings velvety tannins and fruity aromas, Cabernet Franc and Cabernet Sauvignon provide structure and depth, Tempranillo adds elegance, Petit Verdot adds complexity to the wine, and Syrah brings a spicy note.
The special feature of this wine lies in its biodynamic production and the careful processing of each individual grape variety. Each batch is pressed separately and mash fermentation takes place spontaneously with the grape's own yeasts in a wooden tub. Depending on the variety, the maceration time varies between 10 and 20 days. The 18-month aging in barriques, half of which in new barrels, gives the wine its remarkable finesse and elegance.
The Cassiano comes in a bright, intense cherry red. Its bouquet is characterized by ripe cherries, licorice and wild herbs. On the palate, a harmonious mouthfeel develops with a mild tannin structure and spicy herbal freshness, which gives the wine a particular complexity.
