The Enosi Cuvée IGT 2024 by Baron di Pauli is an elegant and expressive blend of Riesling and Sauvignon Blanc. In the glass, the wine shows a pale straw-yellow colour. The bouquet captivates with complex aromas of exotic fruit, citrus notes, white flowers and a subtle touch of spice. On the palate, the wine is fresh and lively, with well-integrated acidity, fine minerality and a long, elegant finish.
The combination of Riesling and Sauvignon Blanc offers an intriguing interplay. Riesling contributes vibrant acidity and aromas of green apple and citrus fruits, while Sauvignon Blanc adds tropical fruit notes and herbal nuances. This blend gives Enosi its distinctive complexity and balance.
A distinctive feature of this wine is the separate vinification of the two grape varieties. The Riesling grapes are directly pressed and fermented in stainless steel tanks, while the Sauvignon Blanc grapes undergo a twelve-hour maceration before pressing. Part of the must is fermented in wooden barrels. The wine then matures for eight months on the fine lees, gaining additional complexity and structure.
