The modern history of the distillery began around 15 years ago, when former chef and now master distiller Florian Rabanser acquired the estate, restored it, and transformed it into a state-of-the-art premium distillery.

The Zu Plun Distillery is a traditional distillery located in the heart of the Dolomites, specifically in Castelrotto (Seis am Schlern), South Tyrol, Italy. The name “Zu Plun” refers to the historic Plunhof from the 14th century, which was once part of the estates of Hauenstein Castle, owned by the famous poet Oswald von Wolkenstein.
The modern history of the distillery began around 15 years ago, when former chef and now master distiller Florian Rabanser acquired the estate, restored it, and transformed it into a state-of-the-art premium distillery. Rabanser, bringing his culinary experience into the art of distillation, follows a clear quality standard: “I don’t like superficial products – they don’t express my essence. It’s like my firm handshake.” 
Today, Zu Plun stands for authentic, handcrafted spirits that reflect the essence of the Dolomites. The range includes the award-winning Dol Gin, distilled with 24 Dolomites herbs, as well as innovative variants such as Yellow Gin with Garda lemons, Grenoir with pomegranate, and Salz Gin with salt and oysters. 
The distillery places great emphasis on sustainability, using local raw materials and environmentally friendly production methods. All products are distilled in copper stills using a batch distillation process and age directly on site. 
Through the combination of tradition, innovation, and deep connection to the region, Zu Plun has secured a strong position in the world of premium spirits. Its products are internationally recognized and reflect the passion and craftsmanship of the Dolomites.
