The Praeclarus Pas Dosé 2020 by St. Pauls is a premium South Tyrolean Metodo Classico and part of the exclusive “Praeclarus” sparkling wine line. The secondary fermentation takes place traditionally in the bottle, followed by extended lees ageing – a key quality factor that ensures finesse, complexity and a particularly fine mousse.
As a Pas Dosé, no dosage is added after disgorgement. This means zero added sugar, maximum precision and a particularly pure, dry style. Terroir, grape variety and vintage are expressed with clarity and authenticity.
The 2020 vintage stands out for its precise acidity, mineral tension and balanced structure. On the nose, aromas of citrus fruit, green apple and subtle yeast notes unfold; on the palate it is focused, clean and elegant, with vibrant acidity, creamy mousse and a long, dry, mineral-driven finish.
