The Lieben Aich DOC 2023 from Manincor is a characterful Sauvignon produced from organic farming in South Tyrol. The grapes come from the Lieben Aich vineyard above Lake Caldaro, where warm days, cool nights, and calcareous soils create ideal conditions for this variety. Organic cultivation and careful manual work in the vineyard allow for a pure and authentic expression of the terroir.
In South Tyrol, Sauvignon thrives particularly well in hillside vineyards of the Überetsch area. The combination of Alpine influence and a milder climate enhances both aromatic intensity and structural elegance. In well-ventilated sites such as Lieben Aich, the variety develops notable depth and finesse.
Vinification is carried out gently with spontaneous fermentation, followed by aging on fine lees, which adds complexity and texture while preserving the natural balance between fruit and minerality.
In the glass, it shows a bright pale yellow color. The nose reveals intense aromas of elderflower, ripe citrus, and subtle herbal notes. On the palate, it is juicy and layered, with lively acidity, fine minerality, and a long, elegant finish.
