The Elisa Cuvée White IGT – 2024 from Castel Sallegg is a vibrant and fresh white wine from the Dolomites, known for its bright straw-yellow color and its fruity-floral bouquet. This wine is the result of a carefully selected blend of Sauvignon Blanc, Pinot Grigio, and Pinot Bianco, which together create a perfect balance of fruitiness and freshness. The grapes come from high-altitude vineyards around Caldaro, situated at about 500 meters above sea level, where they thrive on deep, humus-rich clay soils with calcareous gravel. The mild, Mediterranean climate of the Dolomites provides ideal conditions for the ripening of these varieties. After manual harvesting and gentle pressing, the individual varieties are fermented at controlled temperatures in stainless steel tanks. The wine then undergoes a 12-month maturation on its fine lees to enhance its structure and complexity. Before bottling, it is further aged for 6 months in the bottle. In the glass, the Elisa Cuvée White displays a vibrant yellow color. The bouquet is fresh and lively, with aromas of freshly cut grass, green apples, grapefruit, and ripe apricots. On the palate, the wine shows a pleasant freshness, well-integrated acidity, and a fine minerality, giving it remarkable length.
