The Sylvaner DOC Aristos 2024 from Eisacktal Winery is part of the prestigious Aristos range, a collection of premium wines produced exclusively from carefully selected grapes grown in the finest vineyards of the Isarco Valley. This flagship line represents the winery’s highest standards, combining low yields, meticulous handcraftsmanship, and winemaking techniques designed to highlight the unique character of each grape variety and its terroir. The Sylvaner grapes come from sunny vineyards surrounding the Sabiona Monastery at elevations between 550 and 700 meters, where gravelly soils rich in diorite contribute elegance and pronounced minerality.
Following hand harvesting, the grapes undergo a short period of skin contact before gentle pressing. Temperature-controlled fermentation is followed by ten months of aging on the fine lees, partly in stainless steel tanks and partly in large acacia casks. This maturation adds depth, balance, and structure while preserving freshness.
In the glass, the wine displays a bright pale yellow color with greenish reflections. The bouquet reveals aromas of ripe peach and green apple, complemented by delicate mineral notes. On the palate, it is lively and well-structured, offering vibrant freshness, refined elegance, and a long, harmonious finish.
