Sauvignon is one of the region’s most important white grape varieties and shows exceptional aromatic precision, especially in the hillside areas around Bolzano and the Isarco Valley. The pronounced temperature differences between warm days and cool nights help preserve vibrant freshness and beautifully defined fruit. On mineral-rich soils, the grape expresses its signature tension and elegance.
In the glass, it shows a pale straw-yellow color with greenish reflections. On the nose, it opens with an intense and varietal bouquet of elderflower, gooseberry, fresh herbs, and delicate citrus notes. On the palate, the Bubo is juicy and precise, with lively acidity, clear fruit, and fine mineral freshness. The finish is harmonious, aromatic, and elegantly persistent.
