The Sauvignon DOC “The Wine Collection” 2019 is part of the prestigious top-tier range of the Eppan Winery and represents a strictly limited selection sourced from particularly well-suited Sauvignon Blanc vineyards. Only carefully selected grapes from the finest Sauvignon sites around Appiano are used for this wine. The ageing process is carried out with great precision and includes cold maceration, temperature-controlled fermentation and several months of maturation on fine lees, partly in oak, enhancing complexity and ageing potential. Made from 100% Sauvignon Blanc, this wine benefits from Alto Adige’s cool nights and mineral-rich soils, which contribute to aromatic clarity and precision. Typical characteristics include pure fruit expression, vibrant acidity and pronounced freshness, here complemented by structure and depth. In the glass, it shows an intense straw-yellow colour with golden highlights. The bouquet is layered and refined, offering aromas of exotic fruit, gooseberry and elderflower, complemented by hints of white peach and citrus. On the palate, it is juicy and mineral-driven, well balanced, with fine acidity, good body and a long, elegant finish.
