The Rosenmuskateller DOC Praepositus 2023 from Novacella Abbey is a distinctive South Tyrolean sweet wine made from the rare Rosenmuskateller grape variety. The grapes come from the Marklhof estate in Girlan near Eppan, where the vines grow at around 350 metres above sea level in a south-facing site. The soils are characterised by loose moraine deposits over a porphyry subsoil.
After harvest, the wine undergoes five days of fermentation on the skins. The grapes are then pressed and fermentation continues in stainless steel tanks, where the wine also matures for nine months. Praepositus pairs particularly well with fruit-based desserts, apple strudel, crostata and chocolate desserts, while it can also create interesting contrasts with savoury dishes.
In the glass, it shows a brilliant garnet-red colour with brick-red highlights. The intense bouquet recalls fragrant roses, preserved figs, vineyard peach and dark forest berries, complemented by delicate notes of dark chocolate and coffee. On the palate, fresh berry fruit, fine sweetness and lively spice come together in an expressive and complex style.
