Sophie 2025 from Manincor is a certified organic wine produced according to biodynamic principles in South Tyrol. The blend consists of 93% Chardonnay, 4% Sauvignon Blanc and 3% Viognier. The grapes come from the Lieben Aich vineyard near Terlan and Mazzon near Kaltern. At Lieben Aich, the vines grow on poor sandy soils formed from weathered porphyry, while Mazzon is characterised by calcareous, loamy loess soils on steep south-west-facing slopes. After harvest, the destemmed berries macerate in the press for several hours. Pressing is carried out slowly and gently, followed by spontaneous fermentation with indigenous yeasts in wooden barrels. Ageing on the fine lees adds further depth and structure to the wine. In the glass, Sophie shows a bright yellow colour. The bouquet offers notes of apricot, acacia blossom and linden flowers, accompanied by mineral nuances reminiscent of wet stone. On the palate, it is dense and powerful, yet finely structured, elegant and persistent.
