The Pinot Noir DOC “Vom Kalk” 2022 from Ignaz Niedrist comes from hillside vineyards in Eppan Berg, facing east at elevations between 500 and 550 metres. The vineyards benefit from good ventilation and grow on deep, calcareous gravel soils with clay, dolomite and varying iron content. These conditions help shape the wine’s precise and mineral character. The grapes are harvested by hand towards the end of September and carefully selected. After a short period of cold maceration, fermentation on the skins lasts around two weeks and takes place in open oak vats. The wine then undergoes malolactic fermentation and matures for 15 months on the fine lees in barriques, partly new. Before release, it also spends an additional year ageing in bottle. In the glass, the wine shows a clear ruby-red colour. The complex bouquet combines dried cherry with smoky nuances, almond, hay and distinctive spice. On the palate, it is taut, savoury and structured, with firm acidity, notable complexity and a precise, characterful finish.
