The Sauvignon DOC Aristos 2025 from Kellerei Eisacktal belongs to the winery’s selected Aristos range, which is based on strict grape selection and reduced yields in the vineyard. The line is defined by clear varietal character, complexity and good ageing potential. The grapes for this Sauvignon come from Atzwang in the southern Eisack Valley, where the vines grow on warm, deep and fertile porphyry-derived soils at elevations of around 600 to 720 metres. The grapes are harvested exclusively by hand. After a short period of skin contact, they are gently pressed, followed by temperature-controlled fermentation. The wine then matures for around ten months on the fine lees, partly in stainless steel and partly in large wooden casks. This ageing combines freshness and aromatic precision with added structure and body. In the glass, it shows greenish to pale yellow tones. The bouquet is intense and distinctly herbal, with notes of nettle and gooseberry. On the palate, it is fresh, lively and full-bodied, supported by vibrant acidity and a pronounced aromatic character.
