The Pinot Noir DOC “Dignus” 2021 from Ritterhof comes from selected vineyards in South Tyrol. The vines grow on steep south-west facing slopes in the municipality of Montan, particularly in the Glen area, at elevations of around 450 to 600 metres above sea level. The gravelly clay soils provide ideal conditions for this demanding grape variety and allow the grapes to ripen slowly and evenly. The wine is made exclusively from Pinot Noir, an internationally renowned grape variety that produces particularly elegant and refined red wines in the cooler areas of South Tyrol. The grapes are harvested by hand at optimal ripeness, usually between mid and late October. After careful selection, fermentation takes place in open vats with extended skin contact to extract colour and aromas. The wine then matures in French barriques, followed by additional ageing in bottle. In the glass, Pinot Noir “Dignus” shows a bright ruby red colour. The nose reveals a complex bouquet with aromas of ripe red berries and cherry accompanied by subtle spicy notes. On the palate the wine is juicy and elegant with well-integrated tannins, delicate toasted nuances and a long, harmonious finish.
