Domaine de l’Ecu Méphisto 2022 is a varietal Cabernet Franc produced in France as Vin de France. The grapes come from organically farmed vineyards; the estate has practised organic viticulture since 1975 and has been Demeter certified since 1998. Harvesting is carried out entirely by hand, and the grapes are handled gently and transferred into the winery using gravity.
After destemming, the grapes undergo a short seven-day maceration. Fermentation takes place exclusively with indigenous yeasts. The wine is then pneumatically pressed and matured in amphorae. No fining or filtration is used. This restrained approach to winemaking allows the fruit, structure and varietal character of Cabernet Franc to remain at the forefront.
In the glass, it shows a deep ruby-red colour. The bouquet combines blackberry, strawberry, redcurrant and dark fruits with white pepper. The palate opens softly yet develops tension and depth, with velvety tannins, precise fruit and delicate sweet-spice notes on the persistent finish.
