Neustift Abbey Winery, Via Abbazia 1, 39040 Novacella (BZ), IT
The Sylvaner DOC 2025 from the Abbey of Novacella comes from the Bressanone basin in South Tyrol’s Isarco Valley. The vineyards lie at 650 to 750 metres above sea level with southern, south-eastern and south-western exposures. Light, gravelly moraine soils with mica schist, paragneiss and quartzite shape the sites and contribute to the wine’s fresh, mineral character.
The grapes are harvested at the end of September. Three quarters of the must ferment and mature in stainless steel tanks, while the remaining quarter is aged in large acacia casks. The wine matures for a total of six months. This combination preserves the clarity of the fruit while adding structure and expression.
In the glass, it ranges from greenish yellow to straw yellow. The nose offers ripe apple, ripe pear and honeydew melon. On the palate, it is full-bodied and mineral, with fresh fruit and a juicy finish.
