Saladini Pilastri Comes Pecorino DOCG 2025 is an organic white wine from the southern part of the Marche region. It is made exclusively from Pecorino, a traditional grape variety of the Piceno area. The grapes come from vineyards in Spinetoli and Monteprandone, where different soils and climatic influences give the wine structure, freshness and a distinctive mineral character.
After a short period of cold maceration, the grapes are gently pressed. Fermentation takes place at a controlled temperature in glass-lined concrete tanks. The wine then matures on its lees for at least six months, with regular stirring. This process combines its lively character with a pleasantly soft and balanced texture. It pairs particularly well with fish dishes, seafood, white meat and delicate cheeses.
In the glass, it displays a straw-yellow colour with golden highlights. The aroma is reminiscent of grapefruit, peach, yellow flowers and aromatic herbs. On the palate, it is refined, structured and enveloping, with refreshing acidity, mineral notes and a long, dynamic finish.
