Chablis Fourchaume Premier Cru
The Chablis 1er Cru Fourchaume from Bernard Defaix comes from one of the most renowned Premier Cru vineyards in Chablis, in northern Burgundy. Covering approximately 115 hectares, Fourchaume is one of the largest Premier Cru sites in the appellation. The vineyards are located close to the Grand Cru vineyards and benefit from a favourable south to southeast exposure, allowing the Chardonnay grapes to ripen evenly.
The wine is aged in oak barrels that have already been used several times. Regular stirring of the fine lees adds body and structure, while the oak aromas remain deliberately subtle. After twelve months of maturation, the wine is gently filtered and bottled. This careful winemaking process combines the natural freshness of Chablis with a smooth, complex texture.
In the glass, this Chardonnay displays a pale golden-yellow colour. The bouquet is characterised by fruity aromas and a delicate mineral note. On the palate, it is smooth yet powerful, offering an elegant structure and remarkable finesse. The finish is marked by pronounced minerality, lending the wine freshness and a harmonious, well-balanced conclusion.
