The Chardonnay DOC 2025 from Bergmannhof comes from St. Pauls near Eppan in South Tyrol and is made exclusively from Chardonnay grapes. The vines grow in the estate’s vineyards on clay-rich limestone gravel soils with particularly stony sections. Some of the vines are around 35 years old and are trained using the Guyot system. The grapes are carefully harvested by hand towards the end of August.
Fermentation takes place mainly in stainless steel, while a small portion is vinified in 500-litre oak tonneaux. After malolactic fermentation, the wine matures on the fine lees for seven months. The combination of stainless steel and a small proportion of oak ageing gives the wine a fresh yet well-structured character. It is an excellent aperitif and pairs particularly well with light starters, vegetarian dishes and fish.
In the glass, it displays a bright straw-yellow colour. The bouquet offers fresh notes of lemon, lime and green apple, complemented by white flowers and delicate herbal and spicy nuances. On the palate, it is juicy, lively and balanced, with clear fruit, well-integrated acidity and an elegant, persistent finish.
