The Sauvignon DOC Knott 2025 from Eichenstein Winery originates from the Knott vineyard site in Marling near Merano and elegantly reflects the Alpine character of South Tyrol. The vineyards benefit from the unique combination of Mediterranean influences and the cool air descending from the surrounding mountains, allowing the grapes to retain their freshness and expressive aromatics. Fermentation and ageing in stainless steel tanks preserve the varietal purity and pronounced minerality, resulting in a Sauvignon that authentically expresses its terroir. In the glass, the wine displays a bright straw-yellow colour. The bouquet reveals elegant aromas of grapefruit, fresh lemon zest and delicate hints of nettle. On the palate, it is lively and harmonious, supported by refreshing acidity, distinctive minerality and excellent vibrancy. The finish is long, precise and refined, highlighting the elegance and complexity that define this Sauvignon Blanc.
