The Sylvaner DOC 2025 from Kuenhof comes from South Tyrol's Eisack Valley, where vineyards stretch across steep, sun-drenched slopes south of Bressanone. The altitude, pronounced temperature differences between day and night, and mineral-rich soils composed of schist and quartz phyllite provide ideal conditions for cultivating this grape variety.
The grapes are harvested by hand and gently processed. Spontaneous fermentation and subsequent ageing on fine lees take place in stainless steel tanks and large acacia wood barrels. This combination contributes to a multifaceted white wine that brings together freshness, structure and elegance. It pairs beautifully with fish dishes, vegetables and traditional South Tyrolean specialities.
In the glass, the wine displays a brilliant greenish-yellow colour. The bouquet combines delicate fruity aromas with nutty, mineral and subtle herbal notes. On the palate, it is juicy and full-bodied, with balanced acidity, pronounced minerality and a harmonious, lingering finish.
