The St. Michael-Eppan Pinot Noir DOC 2025 comes from vineyards in Eppan and Kaltern, where cool yet sunny sites provide particularly favourable conditions for this demanding grape variety. Pinot Noir is regarded as one of the most highly prized and challenging red grape varieties. The vines grow on soils composed of moraine debris and limestone gravel and are trained using the Guyot system. The grapes are harvested by hand and carefully selected. In the cellar, fermentation takes place in stainless steel tanks. The wine then undergoes malolactic fermentation and matures in large wooden casks. The result is a distinctive South Tyrolean Pinot Noir with structure and elegant fullness, highlighting the refined and unmistakable character of the variety. It pairs particularly well with lamb, kid goat, veal liver, braised dishes and mature cheeses. In the glass, the wine shows a garnet-red colour. The nose reveals delicate aromas of red berries and forest fruits. On the palate, it is refined and elegant, with fruity spice and a harmonious, finely structured overall impression.
