The Sauvignon DOC 2025 by Hans Rottensteiner is a characterful white wine from South Tyrol, made from 100% Sauvignon Blanc grapes. The vineyards are located around Missian in the Appiano area, where calcareous and porphyry soils provide ideal conditions for this variety. This unique terroir creates a balanced interplay of freshness and minerality. Although Sauvignon is one of the more recent varieties introduced to the region, it has quickly established itself as one of South Tyrol’s most expressive white wines thanks to the favorable climate of the Überetsch area.

The vines, planted in the early 2000s, consistently produce high-quality grapes. After harvest, fermentation takes place at a controlled temperature of around 19 °C, followed by aging in stainless steel tanks, preserving the wine’s aromatic purity and varietal character. In the glass, it shows a pale straw yellow color. The nose reveals typical aromas of elderflower, white fruit, and a subtle spicy note. On the palate, it is lively and fresh, with a refined structure, crisp acidity, and a delicate mineral touch. The finish is clean, balanced, and pleasantly persistent.
