St. Pauls Aurie Petit Manseng IGT 2023 is a distinctive sweet wine made from late-harvested Petit Manseng grapes. The grapes remain on the vines until late autumn and come from warm vineyard sites around St. Pauls, situated at approximately 350–400 metres above sea level. The vines are around ten years old and grow on calcareous Flinz soils. Slow fermentation takes place in temperature-controlled stainless steel tanks. The fermentation process is naturally stopped through cooling, after which the wine matures on the fine lees. This winemaking approach combines the natural sweetness of the late-harvested grapes with pronounced freshness. Aurie pairs particularly well with desserts and mature cheeses. In the glass, the wine displays attractive golden hues. Its complex bouquet recalls quince, honey, dried apricots and mango. On the palate, sweetness and lively acidity create an engaging balance, giving the wine an elegant and harmonious character despite its intense fruit expression.
