Mario Schiopetto Sauvignon DOC Collio 2024 is made exclusively from Sauvignon grapes. The vines grow on the hills of the Collio area, on cool, clay-rich soils. The grapes are harvested by hand and then gently pressed. After a short clarification of the must, fermentation takes place in temperature-controlled stainless steel tanks. The wine then matures for eight months on the lees, allowing its aromatic complexity and clear structure to develop. In the glass, it shows a straw-yellow colour with pronounced green reflections. The bouquet combines delicate floral notes with exotic fruit and citrus nuances. On the palate, it is complex and balanced, with hints of mint and nettle alongside exotic fruit and a distinctive saline note that gives the wine freshness and character.
