La Contessa DOC 2025 from Manincor is an elegant organic white wine from South Tyrol, combining finesse, freshness and remarkable aromatic complexity. Produced according to biodynamic farming principles, this refined blend consists of 55% Pinot Blanc, 28% Chardonnay and 17% Sauvignon Blanc and carries the Terlano DOC designation. The grapes come from the Lieben Aich vineyards in Terlano and Campan in Caldaro. The warm, sandy porphyry soils of Terlano provide ideal ripening conditions, while the cooler, limestone-rich clay soils of Caldaro create an intriguing contrast. After careful hand harvesting, the destemmed grapes undergo six hours of skin maceration. Spontaneous fermentation then takes place in wooden barrels using indigenous yeasts. Nine months of ageing on the fine lees give the wine additional depth and elegance. It pairs beautifully with fish dishes, Mediterranean starters and white meats. In the glass, La Contessa displays an intense yellow colour with greenish reflections. Its fresh bouquet reveals aromas of apple and apricot, complemented by a delicate hint of sage. On the palate, it impresses with a rich yet elegant structure, a smooth texture and a long, harmonious finish.
