Sylvaner Riserva DOC Sabiona 2021 from Eisacktal Winery is produced from selected vineyards located on the steep slopes surrounding the Sabiona Monastery above Chiusa in the Isarco Valley. Sylvaner thrives in this alpine environment and is considered one of the region’s most distinctive white grape varieties. For the Sabiona range, only grapes from particularly suitable vineyard sites are chosen, highlighting the mineral character and unique terroir of the area. As a Riserva, the wine undergoes an extended ageing period, allowing it to develop greater depth and complexity. Part of the maturation takes place in large oak casks and on the fine lees, enhancing structure, elegance and ageing potential. The high-altitude vineyards and significant day-to-night temperature variations contribute to the wine’s precision and remarkable character. In the glass, it shows a pale straw-yellow colour with greenish reflections. The bouquet reveals aromas of ripe apple, pear, alpine herbs and subtle mineral notes. On the palate, it is powerful and precise, with vibrant freshness, pronounced minerality and a long, harmonious finish.
