The Grüner Veltliner DOC 2025 from the Neustift Monastery Winery is a fresh and precise white wine from the Eisack Valley, one of South Tyrol’s highest wine-growing regions. The grapes come from steep vineyards at altitudes between 600 and 750 meters around Neustift and Vahrn. Mineral-rich glacial soils combined with cool nights enhance freshness, clarity and aromatic finesse. Grüner Veltliner is one of Central Europe’s most important white grape varieties, known for its spicy aromatics, lively acidity and elegant style. In the Eisack Valley, it expresses particular minerality and precision. After hand harvesting, the grapes are gently pressed and fermented at controlled temperatures in stainless steel. The wine is also aged in stainless steel, preserving its freshness and varietal character. In the glass, it shows a light straw yellow color with green reflections. On the nose, aromas of green apple, citrus and subtle spice emerge, accompanied by a delicate pepper note. On the palate, it is fresh, lively and elegant, with precise structure, fine minerality and a long, harmonious finish.
