The Sauvignon DOC Fallwind 2025 from St. Michael-Eppan Winery is part of the Fallwind range, a collection that highlights varietal character, freshness and a strong sense of origin. Its name refers to the cool downslope winds that flow from the surrounding mountains into the vineyards, creating significant temperature differences between day and night. These conditions encourage slow ripening and help develop the wine’s intense aromatics and vibrant structure. The grapes come from selected vineyards around Appiano and are gently vinified in stainless steel to preserve their natural freshness. In the glass, it displays a bright straw-yellow colour with greenish reflections. The bouquet offers aromas of elderflower, gooseberry, grapefruit and fresh herbs, complemented by delicate mineral nuances. On the palate, it is juicy and elegant, featuring lively acidity, precise fruit and excellent balance. Its long and refreshing finish highlights the expressive character of this typical South Tyrolean Sauvignon.
