The Sauvignon DOC Saxum 2025 from Pfitscher Winery comes from the high-altitude vineyards of South Tyrol. The Sauvignon Blanc grapes grow in Völs am Schlern and Montan, at elevations ranging from 500 to 900 metres. The calcareous soils of glacial origin shape the wine's distinctive origins and contribute to its fresh, aromatic character.
Vinification takes place in temperature-controlled stainless steel tanks. The wine then matures on its fine lees, allowing its aromas to develop further and creating a balanced flavour profile. This gentle winemaking process preserves the grape variety's characteristic fruitiness while highlighting the elegant freshness of Sauvignon Blanc. It pairs particularly well with asparagus dishes and light fish preparations.
In the glass, the Saxum displays a brilliant lemon-yellow colour. Its intense bouquet reveals aromas of gooseberries, currants, elderflower, lilac and peach. On the palate, it is dry, fruit-forward and lively, with refreshing acidity and a harmonious balance between aromatic intensity and vibrant freshness.
